This is a really easy dish to make, taking advantage of the fresh fish from Banderas Bay.
Serve as an appetiser, or with rice and vegetables as a main course.
Spinach (frozen, squeezed well, or fresh: chopped well)
Fillets of White fish , 1 per person
Peeled, deveined shrimp, approx 3 – 6 depending on size per person
Salt & pepper to taste.
Line a lightly oiled 8″ x 10″ baking dish (size to be determined by how many rolls you want) with spinach.
Take any flat white fish (filleted by the vendor) and roll with peeled shrimp inside. Secure with a toothpick, place on the spinach.
Prepare a hollandaise sauce, (from a packet is allowed!), pour over. Season to taste.
Cover with foil and bake for 20 min in a moderate oven.
Remove foil and let set for 2-3 minutes, then place on serving dish. Remember to remove toothpicks.
Garnish with parsley or cilantro.
