This recipe serves 2 – 4
This salad is refreshing and versatile – ideal for our hot summer weather! Serve as a side dish or salsa, it pairs beautifully with all types of cuisine.
1 cucumber peeled, seeded and diced
1/2tsp. minced jalapeno
1T. fresh lime juice
1T. fresh lemon juice
2t. brown sugar
2T. dried, unsweetened shredded coconut
1 mango peeled and diced *
1 small red pepper
1/2 bunch chopped cilantro
Mix all ingredients in a serving bowl except cilantro.
Serve with cilantro on top
I sometimes use 2-3 mangos – depending on how meaty they are.
