Donita’s Thai Green Mango Salad

Donita Hart made this fabulous salad as part of the meal served for the fundraiser for Wayland at Philo’s in May.  Donita says this is the perfect time of year because the mangos are in season.  Serves 4 as a main salad; 6 as a side salad.

2 firm unripe mangos

1/4 cup shredded coconut

2 cups bean sprouts

1/2 cup chopped cilantro

3 to 4 green onions

handfull of chopped peanuts

1/3 cup basil


3 tbsp.fish sauce or for vegetarian soy sauce

1/4 cup lime juice

2 tbsp. brown sugar

1 to 2 tsp. thai chili sauce ex. Sambal Olek

1. brown coconut in dry frypan

2. mix all salad dressing ingredients and set aside

3. peel mangos and julian with mandolin or knife or grater

4. add bean sprouts, cilantro, green onions, plus half the coconut. Mix well

5. add dressing, toss and sprinkle the rest of the coconut, peanuts and more basil.
