Another easy to prepare dinner! You can fry the chicken breasts but I prefer to grill them on the BBQ as a token towards healthier eating.
Ingredients: Serves 4:
1 teaspoon olive
4 chicken breasts, boneless and skinless
1/4 cup Philly cream cheese spread
1/3 cup reduced sodium chicken broth (still trying to be healthy)
2 tablespoons pesto sauce
Heat oil in large nonstick skillet on medium heat. Add chicken; cook 6 to 8 minutes on each side or until done (170 degrees F). Or grill on the BBQ 6 minutes each side. Transfer to plate; cover to keep warm.
Add cream cheese spread to skillet; cook on medium heat 5 minutes or until melted. You must keep an eye on this and stir constantly.
Whisk in broth and pesto.
Cook and stir for 2 to 3 minutes or until sauce is thickened and well blended. Pour over chicken.
Serve with rice or pasta, salad or vegetables.
